Meet the Mushrooms

Lion’s Mane

Lion’s Mane, or Hericium Erinaceus, is a white, pompom-shaped mushroom that grows outwards as a cluster of tightly packed spines that begin to cascade downwards as the mushroom matures, at which point they resemble a lion’s shaggy mane. Not only are they a culinary delight, but they contain rare medicinal compounds that may improve neurological health, bolster the innate immune system and even help treat estrogen-linked breast cancer.*

Taste & Texture: Resembles crab or lobster meat. Subtle sweet and savory flavor; with a meaty yet delicate texture.

Cooking Tips: We recommend using Lion’s Mane to complement or replace seafood dishes, fry into little nuggets, or grill meaty mushroom steaks!

Blue Oyster

Blue Oyster, or Pleurotus Ostreatus, is a classic oyster variety that grows large, thick, and meaty clusters of blueish-gray mushrooms. Growing in nice cool air allows this variety to develop the deep blue hues that give these mushrooms their name. Like all mushrooms, it is a nutritional and medicinal powerhouse that will level up your meals and health!

Taste & Texture: Rich earthy, umami flavor. A chewy but tender texture.

Cooking Tips: Blue Oyster is one of the most versatile mushrooms. We recommend using this mushroom as a gourmet replacement for your staple mushroom recipes as well as for just about any mushroom dish you can think of. Whether you are pickling mushrooms, making a mushroom soup or sauce, grilling mushrooms, etc. the blue oyster will get the job done!

Black Pearl Oyster

Black Pearl Oyster, or Pleurotus Ostreatus, is a hybrid mushroom that resembles King Trumpet but grows in large clusters like other oyster mushrooms. In Japan, they call it Shimofuri which means “Marbling” because of its beautiful marbled black caps.

Taste & Texture: Mild sweet, umami flavor with a peppery finish. Dense, meaty texture.

Cooking Tips: AARGH MATEY, we recommend trying this pirate-friendly mushroom on the grill with a nice smoky barbecue sauce, or cut into scallop-sized pieces and basted to perfection. Check out our Instagram highlight reels for an easy mushroom “bacon” recipe!

Chestnut

Chestnut Mushroom, or Pholiota Adiposa, a scaly-cap mushroom, draws you in with its bright, copper-colored cap that looks like it’s been dusted with snow. The snow actually being shaggy mycelium, the furry-looking white stuff that mushrooms grow from! In addition to offering fresh Chestnut, we also offer Chestnut mushroom powder (link coming soon) for Chefs looking to utilize its unique flavor or its bread-fortifying properties.

Taste & Texture: Mild, earthy flavor with smoky notes. The texture excites with crisp snappy stems & meaty, thick caps.

Cooking Tips: Chestnut works very well for a gourmet cream of mushroom soup or other creamy dishes. Also great in stews, roasts, and other long cook-time dishes because it softens the firm stem. Can also be sautéed simply with garlic, butter, and fresh herbs and be the perfect salad or pizza topper!
